Ingredients
- 4 fresh chorizo sausages
- 4 crusty bread rolls (French bread style)
- 1 cup chimichurri sauce
- Optional: criolla salsa
Instructions

Score the chorizos diagonally on both sides (butterfly cut optional).

Grill over medium heat for 12-15 minutes, turning occasionally.

Slice bread rolls lengthwise, keeping them connected.

Toast bread cut-side down on the grill for 1-2 minutes.

Place chorizo in bread.

Top generously with chimichurri.

Serve immediately while hot.
Chef's Tips
- Use fresh chorizo, not cured Spanish chorizo
- Butterfly cut allows chorizo to cook faster and fit better
- The bread should be crusty outside, soft inside
