Ingredients

  • 4 fresh chorizo sausages
  • 4 crusty bread rolls (French bread style)
  • 1 cup chimichurri sauce
  • Optional: criolla salsa

Instructions

Score the chorizos diagonally on both sides (butterfly cut optional).

Grill over medium heat for 12-15 minutes, turning occasionally.

Slice bread rolls lengthwise, keeping them connected.

Toast bread cut-side down on the grill for 1-2 minutes.

Place chorizo in bread.

Top generously with chimichurri.

Serve immediately while hot.

Chef's Tips

  • Use fresh chorizo, not cured Spanish chorizo
  • Butterfly cut allows chorizo to cook faster and fit better
  • The bread should be crusty outside, soft inside
