Matambre a la Pizza
Thin flank steak topped with tomato sauce, cheese, and ham. Uniquely Argentine.

Ingredients
- 600g matambre (flank cover), pounded thin
- 1 cup tomato sauce
- 200g mozzarella cheese, sliced
- 100g ham, sliced
- 1 tsp dried oregano
- Salt and pepper
- Olive oil
Instructions

Season matambre with salt and pepper.

Grill or pan-sear over high heat until browned, about 3 minutes per side.

Transfer to a baking dish or keep on grill with indirect heat.

Spread tomato sauce evenly over the meat.

Layer ham slices on top.

Cover with mozzarella cheese.

Sprinkle with oregano.

Cook until cheese is melted and bubbly, about 8-10 minutes.

Let rest 5 minutes before slicing.
Chef's Tips
- Pound the matambre thin and even for consistent cooking
- If using a grill, close the lid to melt the cheese
- Can also be finished under a broiler
