Grilled provolone cheese with oregano and chili flakes. The perfect asado starter.

Ingredients
- 300g provolone cheese (1 inch thick slice)
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Drizzle of olive oil
- Crusty bread for serving
Instructions

Place cheese in a cast iron pan or directly on a clean grill.

Cook over medium heat until bottom is golden and crispy, about 4 minutes.

Flip carefully and cook another 3-4 minutes.

Sprinkle with oregano and red pepper flakes.

Drizzle with olive oil.

Serve immediately with crusty bread.
Chef's Tips
- Use Argentine provoleta or aged provolone that holds shape when heated
- The cheese should be crispy outside, melty inside
- Don't skip the oregano - it's essential
